The teenagers watched top chef Nick Claxton Webb at work, received a masterclass in the restaurant’s food philosophy of using the best local ingredients, and visited Congham Hall’s famous herb garden – renowned for its collection of 400 varieties.
Catering lecturer Ken Attfield said the visit had been a wonderful opportunity for the students to see a top chief in action in his own kitchen.
“The learners really enjoyed the visit. They said it was a chance of a lifetime and great to learn new things and see the amazing vegetable garden at the hotel. I know that they are looking forward to returning in the future,” he said.
Congham won the title of Best Small Hotel in the UK at the International Hotel Awards and was shortlisted for Best Small Hotel in the World. The Norfolk hotel has been described as a “destination dining address” by the AA.
The visit was organised by award-winning chef Murray Chapman, founder of young chefs’ competition “A Passion to Inspire”, to promote links between the catering industry and education.
