Grant’s new SV200 stirred heater transforms cooking vessel into sous vide bath

Grant Instruments, a world-renowned supplier of temperature controlled equipment to the scientific instrumentation and catering markets, has introduced the SV200 stirred heater which can transform a standard cooking vessel into a sophisticated sous vide cooking bath.

The new SV200 universal stirred heater, designed in close collaboration with top sous vide chefs, can be clamped onto any vertical sided cooking vessel (up to 50L) to create a convenient and cost effective sous vide solution. Sous vide cooking has revolutionised many top restaurant kitchens and is now catching on among chefs and gastronomy experts in mainstream restaurants,  gastropubs, cooking schools and in contract caterers.

The Grant SV200 product offers exceptional water temperature stability (±0.05°C), and precise temperature control (ambient plus 5 to 100°C) via a simple to use rotor dial.  It also features an easy to read LED display, providing a clear view of the set temperature across the kitchen, and a visual alarm and countdown timer.

To ensure safe operation in a busy kitchen environment, the SV200 comes as standard with a low water level automatic trip switch, a fixed over temperature cut-out facility and a stainless steel cage for encasing the submersed elements, which prevents snagging and allows the safe retrieval of the sous vide packs.

Sous vide, a French word meaning ‘under vacuum’, is a process in which food (e.g. a cut of beef or fillet of salmon) is vacuum packed and then slowly cooked at an accurately controlled temperature. The sous vide method enhances the taste and amplifies the flavour of the food as the juices and nutrients are “locked in” the vacuum-sealed pouch.

As well as the taste and consistency advantages, the sous vide technique also allows for food portions to be prepared in advance – and stored safely for comparatively long periods of time - to meet peaks and troughs in demand. There are also significant space saving benefits from sous vide cooking.
